Berry Beautiful Pie

Lovely year round, this colorful fruit pie is especially brilliant in with fresh summer fruit.
Ingredients:

Filling:
2 C ripe, organic strawberries or raspberries
2 C ripe, organic blueberries or blackberries
½ C raw honey
3 T tapioca flour
1 lemon, juiced

Crust:
1½ C organic almonds or walnuts
2 T sucanat
6 T raw, organic butter or coconut oil
¼ tsp sea salt
½ tsp nutmeg
Optional: organic heavy cream, whipped

Combine the crust ingredients in a food processor and pulse until the nuts are completely ground and the texture is fine. Spread the mixture in a pie pan, then put another pie pan of the same size on top and press down firmly to create an even crust. Bake in a 350º F oven for about 10 minutes, until golden brown. Cool and set aside.

Wash and drain the berries. Crush and cook the dark berries with half the honey, lemon and tapioca over low heat until thickened; set aside to cool; then do the same with the red berries. When the mixtures have cooled, spoon the dark berries into the crust. Top with the red berries. Refrigerate until ready to serve. May be served with fresh, organic whipped cream.
